Blueberry Spelt Muffins:
1/2 cup ground walnuts (chop in food processor to coarse crumb)
1 1/3 cup spelt flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup packed brown sugar
2 tablespoons oil
2 teaspoons vanilla extract
1 (8-ounce) carton plain yogurt
1 large egg
1 1/2 cups blueberries or other fruit

Preheat oven to 400°.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through salt) in a medium bowl; stir well with a whisk.

Combine brown sugar and the next 5 ingredients (through egg) in a small bowl; add to the flour mixture, stirring just until moist. Fold in blueberries.

Spoon batter into 12 muffin cups coated with butter.
Bake at 400° for 20 minutes or until muffins spring back when touched lightly in center and enjoy!

Asparagus Salad:
ingredients: white beans, 2 cups tomatoes, blanched asparagus, marinaded onions, tossed with cilantro and a lemon, mustard and olive oil vinaigrette

Tapenade: in a food processor, blend 1 can kalamata olives, 1 tbsp capers, 1 hot pepper, olive oil and lots pepper.

1 pot Steamed Aromatic Salmon:
2 salmon filets,
1 cup brown rice
1 cup mushrooms
1 bunch cilantro and green onions
soy sauce, sesame oil, sriracha, maple syrup, ginger

Create broth by simmering mushrooms with soy, ginger, green onions, lots of ginger and cilantro. When simmering, add brown rice. Allow to cook for 20min covered.
Marinade salmon in sriracha, soy, maple and ginger. Steam salmon above rice and broth for an additional 20min. Finish with sesame oil.
