Caramelised Carrot & Sweet Onion Hummus: Makes 5-6 servings
– 1 kg of diced organic carrots
– 1 large white onion diced into strips
– 5-6 TBSP of good runny tahini
– 1 can of chickpeas (400g before drained)
– juice of 2 fresh lemons
– garlic powder (or 2-3 fresh cloves roasted with the veg)
– olive oil or balsamic vinegar for roasting
– roast the veggies for 25 minutes then makes as shown 🙂
